Easy Lamb Chops

  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • 1 each lemon
  • 1/8 ounce oregano
  • 1/4 ounce parsley
  • 1 lb lamb chops
  • salt and pepper to taste


  • Preheat oven to 400
  • In a small bow, combine minced garlic, parsley, oregano, and 2 tablespoons of the olive oil.  
  • In a cast iron or other suitable pan that can handle being used in the oven, heat 1 tablespoon of olive oil over medium heat until oil is shimmering.  Season the lamb with salt and pepper all over.  Place lamb in the skillet only when the oil is shimmering.  Sear about 2 minutes on each side allowing it to just brown on outside.  Don't over cook.  
  • Remove from heat and rub the garlic/herb rub over the top of each chop and add skillet to oven.  Roast for 5 minutes!  Remove from pan and add sprinkle of salt on each and let the lamb rest for 5 minutes before cutting.
